Apricot Jam Roll

Ingredients for one roll :

3 eggs, 120 g sugar, 50 g plain flour, 30 g corn starch, 1 pinch of salt, 40 g melted butter, 1 jar of Polla Apricot Jam, icing sugar.

Method :

Separate the egg yolks and whites. Add a pinch of salt and whisk the egg whites until they form stiff peaks. Then mix the egg yolks with the sugar obtaining a light fluffy mixture. Add the sieved flour and corn starch, the melted butter and the egg whites. Gently fold in the ingredients. Pour onto a baking tray 30x40cm covered with greaseproof paper or into a large enough casserole dish. Cook in a preheated oven at 160° C for15 minutes. Turn the pastry onto a silicon mat or a slightly damp, clean tea-towel, roll up, starting on the longest side and leave to cool. Unroll, spread with the jam and roll up again. Sprinkle with icing sugar and serve.
