Dogfish with Sage

Ingredients for 4 people:

850 g spiny dogfish, Polla Lemon Dressing, 8-10 fresh Ligurian sage leaves, Polla Taggiasco Extra Virgin Olive Oil, salt and pepper.

Method :

In a large saucepan, bring the water to boil. Add the spiny dogfish and cook for 15 minutes. Once cooked, drain and keep warm. Prepare a cream from the Polla lemon dressing, chopped sage and salt and pepper. Remove the central bones from the fish and break into big chunks. Dress with the lemon and sage cream and leave to rest covered for a few minutes. Serve warm.
