Ingredients for 4 people:
150 g yellow peppers, 135 g Rossese grapes, 120 g bresaola, parmesan flakes, Polla Extra Virgin Olive Oil PDO, salt and pepper as necessary.
For the recipe bresaola with peppers, parmesan and grapes, peel the peppers, removing the seeds and white “ribs”, then rinse and cut into chunks. Cut the bresaola into strips, and the cleaned and dried grapes into thin wedges. Using a potato peeler prepare 60g of parmesan strips. Add all the ingredients to a bowl and dress with Polla extra virgin olive oil PDO, salt and pepper and serve about 2 spoonfuls each on small plates.
